Cassava Cake
While we're talking about baking, I would like to share with you a dessert that is easy to make and if you're staying overseas (in US mainly...I don't know about UK) the ingredients can easily be found at the oriental stores. This is a Filipino dessert called
CASSAVA CAKE. In malay we call it
BINGKA UBI Got this recipe from a dear friend (actually from her sister-in-law) who made this for her wedding. It's quite easy to make and can be prepared ahead of time...I just love the sweet scent from the oven when the cake is baked.
Ingredients
2 lbs of grated cassava (usually sold in frozen item - 1 lb pack) ... Here in Malaysia you have to grate your own cassava (ubi kayu) and you need about 900 gms
3 whole eggs
3 cups fresh milk
1 can (small) condensed milk
3/4 cups granulated sugar (original recipe call for 1 cup sugar but I don't have sweet tooth)
1 can coconut milk (1.6 ml) - or about 3/4 cup
1 tsp vanilla essence
1 tbl spoon melted butter or margarine
Preheat oven
Oven temperature: 180 C or about 275-300 F
If you use frozen grated cassava, be sure to thaw it first. Add all ingredients together and mix well. Greese baking pan with butter or margarine...I usually use 6x6x2 (2 of them) or 11x11x2 pan ... bake for about 50 mins or until golden brown
TIPS1. Please use measuring cup!!
