Kuih Lopes

I call this my comfort food when I just need the sugar rush in my body....truthfully, I don't have sweet tooth at all and I would just use very little 'air gula' when eating my lopes.

The above Kuih Lopes was specially prepared by my aunt and cousin in Segamat....a must when we visit their kedai. Each time when I go home, my brothers and sisters would surely ask me to order some for them and most of the time I end up buying up to 100 pcs...and they will go really fast.

The fact is that I can't find any lopes similar or even close to the ones made by my aunt, not here.... did you see the ones they sell at the pasar malam?? My goodness...just the pulut diwarnakan hijau, kemudian ditabur kelapa dan dituang air gula yang cair...urghhh!!!

How does my aunt/cousin made theirs? Don't have the exact method but I've seen people back home prepared our lopes....The pulut (glutinous rice/sticky rice) must be soaked in water & 'air abu'....then individually wrapped in banana leaf and pandan leaf, then secured tightly with toothpicks (actually lidi lebih kuat lagi) and some even tied the wrapped lopes with strings before boiling them...it depends how many you made 'coz boiling time can be up to 1-2 hrs...I'm so used to see lopes being made in large portion...so periuk besar and longer cooking hour.

My aunt usually steam the coconut so it won't spoil easily. Even her 'air gula' is very thick and can last for weeks even months in the fridge. Life span of the lopes in our house ... I would say 8 hours the most...kengkadang terpaksa bersorok!
