Going Bananas!


It's wedding seasons again and it's time to stock basic items for the pantry...as usual...flour, castor sugar, jam, butter and the last order was a request from my niece...she wanted banana muffins as door gifts. The problem is Mjang is not a person who likes to settle for a 'plain' flavored muffins...so here's something new(actually an experiment, since I just modified few ingredients and measurement from my previous Banana Walnut Cake).... hope people like it. I call this WEEN'S MUFFIN

3/4 cup melted butter/margarine
2 whole eggs
1/3 cup + 1 tbl brown sugar (if you have sweet tooth, you can use 2/3 cup of brown sugar)
1/3 cup + 1 tbl castor sugar
4 ripe bananas (mashed)- preferably large
1/4 cup fresh milk
1 tsp baking powder
1 tsp soda bicarbonate
2 cups flour (I use whole wheat flour)
1 tsp vanilla essence
1/2 cup raisins
1/2 cup chocolate chips (I used white chocolate chip & regular chocolate chip)
1/2 cup chopped walnuts




Preheat oven to 170-175 degrees celcius
1. Mix well melted butter, sugar and milk...then add eggs and vanilla
2. Add baking powder & soda bicarbonate to the flour... then add this to the above mixture
3. Fold in the mashed bananas, raisins, chocolate chips and walnuts to the batter
4. As usual I use medium sized cups for the occasion, but it would be nicer if you use muffin cups...fill in about 2/3 of the cup (if you're using muffin cups) but here I only fill in just a little half of the cup...it would rise nicely...Bake for about 18 minutes or until golden brown.



Since this is for door gifts and my niece didn't want any decorations...so I used this alternative for wrapping
